How to Make Lemonade Tarts
>> Thursday, July 15, 2010
So in celebration of Erin's baby, we had a baby shower this week. (Duh.)
And it's July and it's hot. So our theme was "picnic shower." This by sheer definition meant NO HOT FOOD.
It was fun and (if I do say so myself) the food was fabulous.
This recipe comes from my momma. She's made this for many a family gathering most famously Thanksgiving, which is only funny because it's screams "SUMMER" but a little sunshine in November aint too bad either.
Okay, the recipe:
1 6 oz can of Lemonade concentrate (or Limeade) THAWED
1 14 oz can Sweetened Condensed milk
12 ounces Cool Whip
2 graham cracker pie crusts or 2 dozen mini graham crusts
OPTIONAL: Fruit for a topper
Directions:
Mix the lemonade and sweetened condensed milk.

Serve either frozen but softened or totally thawed, but really, it's the BEST when it is frozen.

And possibly the easiest "recipe" that tastes like slaving in the kitchen was required.
Perhaps the HUGEST bonus to this recipe is that when it is 100+ degree outside, this requires ZERO oven or stove time.
YOU WIN!
We did one batch as lemonade and one as limeade. The limeade is more tart for some reason, so if that skeeves you out, then add extra cool whip. No biggie.
Enjoy summer in a pie crust and all the compliments.
